The Voices Behind Foodcast

Simon
I've grown up watching my parents cook, and I come from a family of food enthusiasts. Food and memories are tightly linked, and celebrations of years gone by are often seen through the lens of meals.
Since developing IBS a few years ago I've had to spend a lot of time working out what foods work for my gut, I was very lucky to have had time with my local NHS dietetics team and found that a low FODMAP diet works wonders. If you're interested in FODMAP you can find more info from Monash University

I've got three small boys who keep me on my toes, all with different tastes ranging from 'I only eat beige and no sauce to 'only with sauce and lots of veg please'. It's always a challenge!

I come a line of great cooks, inspire by my Grandma Ritzen made her own jam from the fruits of her garden, made her own bread and cakes but away from that her roasts were amazing as was her cottage pie.

Grandma Baker wasn't such a good cook but was a fabulous baker making delicate individual cakes and legendary drop scones which she made with sour milk. Both Grandma's had a pantry and I have a lifelong yearning for one of my own.

My mother who had to look up how to boil potatoes when she got married to Dad became renowned for her desserts. She always made three desserts after a dinner party. My father was pretty adventurous too and whilst he didn't cook a lot, he was accomplished.

I was never discouraged from cooking and from an early age I was baking, watching my mum cook and to this day there are lots of dishes I make that I do not have a Scooby-Doo what the recipe is e.g. spaghetti Bolognese, cheese sauce and so on.

I worked in the Hospitality and Catering sector as have/had my sons, I taught cookery in evening classes and now I am privileged to be a training manager for a domiciliary care organisation.
For relaxation, I cook....in fact I cook...and eat.....a lot!
