Sesame Roasted Peppers, Prawns, and Pak Choi

This was great on a lazy Sunday evening after the kids had gone to bed.




Ingredients

  • 3 tbsp sesame seeds

  • 3 bell peppers (cut into 1cm wide strips)

  • 200g raw king prawns

  • 2 pak choi, quartered

  • 6 garlic cloves, finely

  • 50g ginger, grated

  • 1 tbsp maple syrup

  • juice of 2 limes

  • 2 tsp Thai 7 spice

  • 2 tbsp soy sauce

  • 1 tbsp sesame oil

  • 80g rice

 

Method

Pre-heat your oven to 180 C (fan) / 200 C. Place the peppers, sesame seeds, sesame oil, ginger, and garlic into a roasting tin and mix together thoroughly with your hands. Place in the oven for 20 minutes. Place the rice in a pan of boiling water and cook for 10-15 minutes, once cooked drain the rice in a colander and leave to dry.


Mix together the maple syrup, soy sauce, lime juice, Thai spice. After 20 minutes take the roasting tin out of the oven, and put in the prawns and quartered pak choi, cover with the lime, soy, and syrup mixture and toss the ingredients together with a spatula. Put the roasting tin back in the oven for 5 minutes.


Remove the tin from the oven, pour over the rice, mix with the spatula and serve.
